Make sure to only cook your potatoes to the par-boil stage otherwise it will be very messy to grate.


  • 2 large sweet potatoes
    1/2 cup flour
    1/2 cup grated parmesan cheese
    1/2 tsp cajun seasoning
    1/2 tsp salt
    1/2 tsp pepper
    8 oz cubed cheddar or mozzarella cheese


  • In a large pot of boiling water, add the potatoes and cook for about 15 minutes. This will parboil the potatoes so they will be slightly firm but able to be pierced with a sharp-pointed knife.
    Drain the potatoes and let cool 10 minutes. Peel potatoes. Using a box grater, grate the potatoes and place in a bowl. Season with salt, pepper.
    Preheat your oven to 450ºF and line a baking sheet with parchment paper.
    Add the flour, parmesan, cajun seasoning ,salt and pepper, and mix to combine.
    Place a small cube of cheese into the center of two tablespoons worth of mixture, and form the mixture into a tot. Repeat with remaining mixture and cheese.
    Place the tots on a parchment-lined baking sheet and bake for 15 minutes.
    Serve with ketchup or your favorite dipping sauce.
