POTATO PANCAKES

Serves: 8

Ingredients

  • 2 lbs baking potatoes
    2 eggs
    1 tablespoon flour
    1/2 teaspoon salt
    3 tablespoons grated onion
    1/2 cup oil

Preparation

  • Peel and wash potatoes. Grate in a food processor. Squeeze moisture out of potatoes. Place in a mixing bowl. Mix in the beaten eggs, flour, salt, pepper and grated onion.
    Heat 2 tablespoons oil in a non stick frying pan. Spoon potato mixture in oil, the equivalent of 3-inch round pancakes.
    Fry to a golden brown color on both sides.
    Heat in oven before serving.
